Crockpot Salsa Chicken

This is one of my favorite crockpot meals. This chicken practically shreds itself and is great with rice or in tacos. There are various recipes for it and this is how I make it.

Crockpot Salsa Chicken

Ingredients

  • 3 large chicken breasts
  • one can fiesta corn
  • one packet low sodium taco seasoning
  • one jar salsa
  • two tablespoons fresh cilantro

Directions

Combine all ingredients, except for the cilantro, in crockpot and mix well.  Cook on low for about 8 hours or until tender. Sprinkle cilantro over chicken.

  1. I was searching for Mojo chicken when I came across your blog.. my mouth is WATERING!!! All the dishes you posted (and with pictures! Bless you- YUM!) look amazing and I LOVE the simplicity (I love food, love to cook, but I’m not very good at it!) Thank you Thank you!!! I had 2 chicken breasts marinating in store bought Mojo and I had to find something to make with them… and I really want to do the slow cooker and have pulled Mojo chicken for dinner… I can taste it already!!
