Chicken and Corn Chili

Standard
  •  1 teaspoon olive oil  
  •  1/2 sweet onion, diced
  • 2 cooked chicken breasts, diced or shredded 
  • 1 can (28 ounces) petite diced tomatoes, undrained
  • 1 can (14.25 ounces) white and yellow corn, drained
  • 2 tablespoons chili seasoning mix (recipe below)

 Chili Seasoning Mix

  • 2 tablespoons chili powder
  • 1 teaspoon season salt
  • 1 teaspoon onion powder
  • 2 teaspoons cumin
  • 2 teaspoons garlic powder
  • 1 teaspoon oregano
  • 1/2 teaspoon crushed red pepper flakes

Directions

Cook onions in olive oil over medium heat for about four minutes.  Add chicken and allow it to warm up for a minute.  Stir in tomatoes, corn and chili seasoning mix.  Bring to a boil and cover. Reduce heat and simmer on low for 30 minutes.
